As you all know, I am a travel-addict. I haven’t wandered too much since I’ve been back from Argentina, but there have been a few notable trips. Orlando to visit family (and of course HOGWARTS). Charleston to visit my lovely friend (and future roomie) Anna Branscomb. Key West (round two) for my final spring break.

Sometimes it’s not where we go that matters, but rather what we have when we return home. Though I had amazing experiences in all three of these cities, I am most thankful for what I have to return to in Georgia. I have a huge life change coming up in a few short weeks. I’ll transition from college kid to young professional. Am I excited? Of course! But I am also going to greatly miss my life in Athens. 

So here you go: a few photos to sum up my few trips.

Next on my list of tumblr updates: a few photos to sum up my wonderful friends, life and JOY in Athens, Georgia. A few photos won’t do it justice, but I’ll do my best. Bear with me.

Seasons Eatings

I’ve already made two batches of my favorite savory holiday treat… SOYsage Cheese Balls. You can enjoy them without feeling guilty for eating a cute little pig! (And without the calories of real sausage, whichever your motivator may be.)

1 log of sausage-style veggie protein (I choose Gimme Lean - a 14 oz portion)
4 cups of sharp cheddar cheese
2 1/2 cups of Bisquick
1 or 2 tablespoons of oil or milk, to moisten
Spices to taste (I use garlic powder, onion powder and cayenne pepper)

Mix all the ingredients in a bowl (you’ll have to use your hands and this can get messy!). Roll into 1 inch balls and place on a greased cookie sheet. Bake for 17-19 minutes at 325 degrees. So easy and so delicious! And I guarantee that meat-eaters won’t even know the difference! Enjoy :)

I Feel Home

Home Sweet Home

I’ve officially been home for an entire week now. The past seven days have been bittersweet, but I’m leaning closer to sweet than bitter. Of course I miss Argentina. I miss having a quiosco on every corner, I miss my friends from the program, I miss traveling. But it feels damn good to be home, too.

Here are some of my favorite experiences from being home so far (in no particular order):

1. Driving my car again, especially the long, open road to Athens

2. Seeing red and orange and yellow leaves everywhere I go

3. Sharing bagels for breakfast with my parents

4. Going to Taquería del Sol with my best friends

5. Walking through downtown Athens and sitting in the sun on North Campus

6. Playing frisbee and hackey sack in the middle of Pope Street

7. Visiting Caitlin at work and enjoying a delicious Pumpkin Spice Latte

8. Challenging a friend to eat the 30 piece shrimp deal from Captain D’s… and watching him actually do it

9. Taking my dog Sam for a long walk through the neighborhood on a perfectly clear autumn afternoon

10. Hanging out with my brother in his new apartment and catching up on the past three months

The list could continue, but I suppose 10 is sufficient for now. There are so many more memories to come, and I feel so thankful to have an entire semester left in Athens. I have a bad case of wanderlust, and yet my roots are deep. It feels good to be back.

I cannot believe that today was my last full day in the city. Tomorrow I’ll have to pack my bags, take one last paseo around the streets of Buenos Aires, and then head to the airport. This video, made by the wonderful and talented Gracie Fisher, is a perfect representation of my semester in South America. I’m nostalgic already and I haven’t even left yet.
